Kaffir Lime Leaves are harvested from an evergreen tree native to Southeast Asia, they are also known as makrut lime. Not to be confused with the common fruit producing varieties, the Kaffir Lime tree has unusual double leaves, joined head to tail.
Dried Kaffir Lime Leaves should have a deep green colour and subtle citrus aroma with a flavour somewhere in between lemon and lime.
- Add to Thai-style curries and stir fries.
- Crush and use in fish cakes for a delicious fresh and aromatic flavour.
- Use to stuff the cavity of whole fish such as sea bass, along with slices of lime and butter before wrapping in foil and baking.
