Cinnamon and cloves used to create pear dessert

Spices are a common ingredient in dishes such as curries and pastas, however they can also be used to create dessert.

Renowned chef Marco Pierre White uses cinnamon and cloves in a recipe for pears poached in red wine and spices, which was published in the Weekend supplement of the Irish Independent.

Both spices, along with three star anise, need to be mixed with red wine and caster sugar in a large ovenproof dish and the whole mixture should then be brought to the boil and stirred.

The pears should be blanched in boiling water for 30 seconds, peeled and de-cored, he advised, before being submerged in the liquid and simmered over gentle heat for about ten minutes.

Kimberley Stakal of Organic Authority recently recommended using cinnamon, cloves and other winter spices to create a stew, adding numerous different spices - including chilli powder - can be incorporated into such a dish.
